Simple & quick Tzatziki

I fell in love with tzatziki for the first time on a trip in Cyprus and I have been making different kind of variations of it ever since! This is one of the many side dishes I love preparing for busy work days. So simple and so tasty.

Simple & quick Tzatziki

Active: 10 min. Passive: 15 min.

- 2 cups (5 dl) Greek or Turkish yoghurt
- 3/4 – 1 cucumber
- 2 cloves of garlic
- 2 tbsp olive oil
- small bunch of fresh dill
- 2–3 sprigs of mint
- pinch of salt

  1. Mix the yoghurt in a bowl until smooth.

  2. Wash and grate the cucumber and add to the yogurt.

  3. Mince the garlic. Chop the dill and mint. Add to the yoghurt with olive oil and a big pinch of salt. Mix and set aside for about 15-20 minutes. Enjoy!
